How to Make an Easy Meal with Chicken Breasts Almondine (And it’s okay for diabetics, too!)

This Recipe for Chicken Breasts Almondine is quick, easy, and healthy.  You can have this meal ready in a little over half an hour, after a long day.  Serve over brown rice with a salad or some steamed broccoli and you have a meal you can be proud to feed your family without a lot of work or clean-up.  And it is diabetic friendly, in case you have any diabetics in your family.  This is a good way for diabetics to enjoy some rice.  Most doctors say it is important to eat almonds, that they are a great heart healthy food, in moderation.  So this is a good way to work them into your diet.  In fact this entire dish is heart healthy.  Chicken, garlic, almonds, mushrooms; all good for your foods!  By-pass the fast food drive-thrus and fix your family this tasty, healthy meal instead.

CHICKEN BREASTS ALMONDINE

2 tbsp butter

1 garlic clove, minced

1/2 tsp salt

1 tbsp cornstarch

1/4 cup roasted slivered almonds

4 skinless, boneless chicken breasts

1 pkg (8-oz) sliced fresh mushrooms

1 can (10-oz) condensed chicken broth

1/2 tsp pepper

parsley for garnish, if desired

Begin preparing about 40 minutes before serving.

In a skillet over medium heat, melt the butter and brown chicken breasts, garlic, almonds, and mushroom slices, stirring occasionally until golden brown.  Add salt, pepper, and chicken broth.  Simmer, covered, for 30 minutes or until the chicken is tender.  Mix cornstarch with a little water; stir into the liquid in skillet.  Cook, stirring constantly, until thickened.  Garnish dish with parsley, if desired.
